  13. 6 small cinnamon sticks
  14. 6 cloves
  15. 6 cardamoms brown/green
  16. 2 tsp caraway seeds
  17. 1 kg basmati rice
  18. 5-6 green chillies vertically slit
  19. As required water for boiling
  20. 1 kg basmati rice
  21. 2 tbsp chopped mint leaves
  22. 1 big tomato(sliced)
  23. 3-4 tbsp deep fried onions
  24. 3 tbsp lemon extracted juice
  25. 1/4 cup saffron flavored milk(2 saffron strands dipped in milk)
  26. 1/2 tsp pineapple essence and Few drops rosewater

Steps to make to make Mutton Dum Biryani

  1. Marinade Mutton pieces in Yogurt, ginger paste, garlic paste, chilli powder, salt and garam masala for 2 hours.
  2. Cut onions in thin slices.
  3. Heat oil in cooker and put whole garam masalas.
  4. Put onions and fry till golden brown in colour.
  5. Add 3 green chillies.
  6. Add ginger garlic paste and saute till raw smells goes.
  7. Add chopped tomatoes and coriander leaves.
  8. Add biryani masala, chilli powder, turmeric powder, garam masala powder and mix well.
  9. Add marinated mutton pieces and cook till Mutton will done.
  10. No need to add water. After cook mutton strain oil from meat and keep aside.
  11. Fry some thin onion slices till brown in colour for biryani.
  12. Fry washed and drained rice in remaining oil. Add water, salt and lemon juice.
  13. Cook till rice will semi done.
  14. Grease a big and heavy bottomed pan.
  15. Make layers from cooked mutton and cooked rice in pan.
  16. Make a hole in middle of layers. Put remaining oil of mutton in hole.
  17. Garnish with fried onions, coriander leaves, mint leaves, sliced tomatoes and fried green chillies.
  18. Sprinkle rose water. Pour saffron milk and pineapple essence over rice.
  19. Seal the lid with atta dough and keep on low flame for 10 minutes.
  20. After 10 minutes open the lid.
  21. Transfer in serving plate and Garnish with fried onions, fried cashews and fried raisins.
