- In a large bowl, add Maida and curd blend it well,Now mix in rice flour, turmeric powder and water till well combined. Cover and keep aside.

- While the batter is kept aside to rest.lets prepare the syrup. In a deep pan add sugar and water.Bring to a boil while stirring constantly. For at least 10 mints.now add in 3 to 4 drops of lime juice,stir and boil for another 3 minutes. Add saffron water, when the Syrup reaches string consistency.turn off the flame.

- While the syrup is still hot.we have to fry the jalebies. In a large kadai heat the oil on medium flame.

- Now,Previously prepared batter add in a pinch of baking soda and mix well.

- Fill a sauce dispenser with the batter and shape the jalebies directly in to the hot kadai.
- For shape, move round and round and back to the start point of the jalebi.move a bit fast or it will spill over
- Shapes wont be perfect for frist few tempts, when the jalebi starts to fry it will form it's own shape..

- Once the jalebies turn golden, drain oil and directly add in the warm sugar syrup.

- Leave the jalebies in the syrup for around 5 minutes.drainoff the excess sugar syrup and it's ready to serve.
